CLASSIC MUSHROOM RECIPIES ⬇️

Mushroom Pepper Fry

A quick South Indian-style stir fry with onions, pepper, curry leaves and fresh oyster mushrooms.

Ingredients
Mushrooms: 250g, wiped clean and thickly sliced.
Black Pepper: 1 to 1.5 teaspoons
Rosemary: 1 sprig of fresh rosemary
Garlic: 3 cloves, finely minced.
Butter: 1 tablespoon.
Olive oil: 1 tablespoon.
Salt: to taste
Optional Kick: A pinch of red chili flakes or teaspoon soy sauce.

Instructions
Heat the olive oil and butter in a large frying pan over medium-high heat.
Add the sliced mushrooms in a single layer. Let them sit untouched for about 3 minutes so their edges turn nicely brown and caramelized.
Toss in the fresh rosemary sprig and minced garlic. Stir gently for 1 to 2 minutes until fragrant.
Sprinkle the freshly crushed black pepper and salt over the mushrooms. Toss everything together for another 2 minutes so the flavors fuse.
Remove the rosemary sprig, transfer the mushrooms to a plate, and serve immediately.

Mushroom Curry

A rich curry that pairs perfectly with chapati, dosa, appam or rice.

Ingredients
250g fresh oyster mushrooms, cleaned and torn into pieces
2 onions, finely chopped
2 tomatoes, chopped
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ tsp garam masala
2 tbsp cooking oil
Salt to taste
Fresh coriander leaves for garnish

Instructions
Heat oil in a pan and sauté onions until golden brown.
Add ginger-garlic paste and cook for one minute.
Add tomatoes and cook until soft and mushy.
Mix in turmeric, chilli powder, coriander powder, and salt.
Add oyster mushrooms and cook for 5–7 minutes.
Add ½ cup water, cover, and simmer for 10 minutes.
Stir in garam masala and cook for another 2 minutes.
Garnish with coriander leaves and serve hot with rice, chapati, or dosa.

Mushroom Pepper Fry

200g MRP's Nature Box Fresh Oyster Mushrooms, sliced
1 tbsp MRP's Nature Box Mushroom Powder
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp butter
2 cups vegetable stock or water
½ cup milk or fresh cream
Salt and black pepper to taste
Fresh coriander or parsley for garnish

Method
Melt butter in a pot and sauté the onion and garlic until soft and fragrant.
Add the fresh oyster mushrooms and cook for 5–6 minutes until tender.
Stir in MRP's Nature Box Mushroom Powder and mix well to enhance the soup's rich umami flavour.
Pour in the vegetable stock and simmer for 10 minutes.
Blend the soup until smooth or leave slightly chunky for added texture.
Return to the pot, add the milk or cream, and season with salt and pepper.
Simmer gently for 2–3 minutes, then garnish with fresh herbs and serve hot.
